A fantastic pre-activity breakfast, that’s also delicious as a healthy dessert.
Ingredients
- 4 Weet-Bix™, lightly crushed
- 1 apple, cored and diced
- 1 tsp ground cinnamon
- 1 tbs protein powder (vanilla flavour works best), optional
- 1 tbs flax seeds
- 2 tbs chopped dates
- Pinch of salt
- 1/2 tsp baking powder
- 1/4 cup water
- 1/2 cup So Good Almond Unsweetened
- 2 tbs chopped raw walnuts, to serve, optional

Method
- Preheat oven to 180°C. Line a 3-cup oven-safe dish or ramekin with baking paper.
- In a medium bowl, combine Weet-Bix, apple, and remaining dry ingredients (cinnamon through baking powder).
- Add milk and water to the dry ingredients, and mix well.
- Transfer mixture to the prepared baking dish and bake for 18 – 22 minutes, until firm on top and warmed through.
- Sprinkle with walnuts, if using, and serve warm or at room temperature.
Tips
Serve bake with a dollop of yoghurt or a splash of milk, if desired.
Batter can be divided and baked in two 1 1/2 cup ramekins, instead of one larger dish.
