Breakfast sorted before you even get out of bed! Harry Butterfield's take on overnight Weet-Bix, cinnamon apples, fresh fruit and macadamias. Creamy, crunchy, fresh and ridiculously easy to throw together the night before.
Ingredients
- 4 Weet-Bix, roughly crushed
- 80ml So Good Oat Milk
- Pinch of salt
- 1/2 a green apple, cut into small cubes
- 1 tsp honey
- 1 tsp lemon juice
- 1 tsp ground cinnamon
- 100g reduced fat Greek yogurt
Toppings
- Seasonal fruit
- 1 tbsp macadamias, roughly crushed
- Drizzle of honey
Method
Combine the crushed Weet-Bix, milk and salt.
Toss the diced apple with honey, lemon juice and cinnamon.
Spoon the Weet-Bix mixture into the base of a container or jar, reserving about a tablespoon for finishing. Press down lightly with a spoon.
Add a layer of Greek yoghurt, then top with your apples and leftover Weet-Bix mixture.
Add seasonal fruit and macadamias, then drizzle with honey. Store in the fridge for 1–2 days.
