Ingredients
Base
- 5 Weet-Bix™, crushed
- 125 g Biscoff spread or nut butter
- 100 mL sugar-free maple syrup
- 1 cup soy protein crisps or puffed rice
Optional protein boost
- 40 g protein powder (If adding protein powder, include an extra 50 mL honey or maple syrup to maintain texture)
Chocolate topping
- 200 g chocolate (dark or vegan)
- 1 tsp olive oil
- Optional: peanut butter drizzle

Method
Prepare the base
Crush Weet-Bix™ into fine crumbs.
In a mixing bowl, combine crushed Weet-Bix™, melted Biscoff or nut butter, maple syrup, soy protein crisps, and protein powder (if using).
Mix until well combined — the mixture should hold together when pressed.Press into tray
Line a square or rectangular baking tray with baking paper. Press the mixture firmly and evenly into the tray to form the base.Prepare the topping
Melt chocolate with olive oil until smooth.Assemble
Pour melted chocolate over the base and spread evenly.
Drizzle with peanut butter if desired.Set & slice
Refrigerate for 30–40 minutes, or until the chocolate has set.
Slice into squares and serve.
